
This Thanksgiving weekend, I have a lot to be thankful for. First and foremost, it has almost been two years since my change of careers and I am thankful that I am still here and able to sustain it. I am living the life that I choose to live. That in itself is a lot to be thankful of. Second on my list is that my support system is just as strong as ever. Never wavering through the years I have known them. I don’t know if I would find my courage alone if not for my family and friends being there to see me through.
So I have made it a tradition now to ask family and friends to give me one night on the Thanksgiving weekend where I would be the one to prepare a meal that we could all share. I am quite happy that a lot of them made it and we all enjoyed a good meal. All day yesterday I spent to cook everything from scratch. I haven’t cooked as much as I have yesterday for a long time. It might seem that I don’t cook as I visit too many restaurants all the time. But I do enjoy cooking. Yes! Ann CAN cook! All day long I did not skip a beat, enjoying all the organized chaos in my kitchen. There is something so pleasurable about knowing that at the end of all the toiling and hard work, I would share the satisfaction of having good food with the people I care so deeply about.
For the years I have done this, I have my favorites to share. This year though, I have added several more dishes I have found online. One of them brown-sugar glazed squash was the favorite of the night. Here is the menu that we have shared:
- Baked double cream brie with cranberry crustini
- Baked kale crisps
- Baked spinach and Gruyère cheese puff
- Baked brown-sugar glazed squash with thyme and sage
- Baked rosemary red-skinned potatoes
- Steamed jasmine rice
- Cranberry hamonado
- Sausage stuffing with celery and sage, cranberry sauce and turkey gravy
- Roasted turkey, of course!
- Banana cupcakes
- Ayen’s leche flan
- Pumpkin and Apple Pie (Not home-made though…maybe next year I should attempt to do one!)
Here’s wishing one and all a Happy Thanksgiving. For all my family and friends, new and old, thank you for being part of my year. My life is richer because of you being part of my life. :)
