Parcae – Permanently closed

A few weeks ago, I was invited to the media tasting for Parcae, the new restaurant and cocktail bar inside The Templar Hotel at Adelaide and Spadina. Started out right from when I walked in the door, I was handed a flute of champagne as I went past the reception area. I was then told I can wander off to check out both the bar and the dining area and me, being me, I took that as permission to shoot my heart away.

Street level, you would get to the bar first and I just love the symmetry of the space. I have said countless times before that I love wood and the warmth of the hardwood floor was reflected off the big canisters on display on the shelves. The space was big, cozy and comfortable, very much a space I could see myself relax in.

While much could be said of the seasonal, nose-to-tail cuisine of Parcae, I just want to talk about a beautiful drink that I immensely enjoyed. When I walked in, I was told I shouldn’t miss the Iluminati, a concoction of Gordons gin, sage-infused lime cordial, green chartreuse and delicately topped with lavender foam. What caught me off-guard was the lavender foam. I love lavender as a scent in anything but I never imagined it in a cocktail drink. I thought it would be bitter and overwhelming but it was contrary to what I was expecting. It was aromatically light, citrusy with just the right hint of sweetness, I could not help but finish it to the last drop. I usually don’t finish off cocktails on a media event as I am mostly given a few but it was one that I finished and enjoyed. It definitely took out a contented sigh out of me. Just for that, hanging out in the Parcae cocktail bar would be worth it.
